Good Old-fashioned "Nana" Bread

Yummy, warm and steamy "nana" bread...yum!
Find the ickiest, smooshiest bananas 
I would love to say that the fresh smell of banana bread(or as my son calls it "nana" bread)is oozing out of the oven in my kitchen right now. Sadly the smell of caramelized chicken Marsala is what I smell...Doh! (palm of hand hits face...repeat times three)I had forgotten to lower the heat... face palm again. Although we missed the sweet beckoning smell of the banana bread. I must say it tasted divine! and since lunch had been so brutally ruined, 8 eager hands were very glad for the sweeter, moister and less caramelized banana-y version of lunch. Banana bread is usually made because you have some very mushy, icky bananas left. and the thought of putting them in a smoothie or a Sunday just doesn't sound or look appetizing. But smashing them up into smithereens and mixing them in with other ingredients until it ceases to resemble something bruised and icky suits us very well. And the smell is should be absolutely to die for...warm toasted walnuts add to the wondrous taste and smell aaaaah...trying very hard to imagine it since all I smell is burnt mushrooms...yuck!

My son helped me make these. 2 bananas, 1 egg and a dump truck were somewhat harmed during this en devour, but not to worry everything and everyone ended up fine (except for the egg of course).
My son has an over eager little spirit and can have the urge to over rush things a tad. frustration and patience is something we are working on. I pray one day he will truly find the joy in cooking.
Anyways, My youngest couldn't wait to get his hands on these warm delicious and steamy slices of "nana" bread (the word steamy totally makes me laugh and somehow makes me think of the song "I'm sexy and i know it" except in this case it's dancing bananas singing the song....I'm way to tired for my own good lol)

Here is the recipe for the "nana" bread...hope you enjoy it!


Here are some tips:

  • I used plain low fat yogurt instead of the sour cream (turned out great!)
  • The bread doesn't really need a crumbly topping since the crust becomes slightly caramelized, sweet and crunchy. 
  • The riper the bananas the sweeter and more banana-y the bread.
  • Store bread in an air free container, bread tends to dry out fast if not stored.
  • If the top starts to darken too fast while baking just lay a piece of foil over the pan, but don't seal it, it needs the air. Just lay it gently on top.


Make sure you spray or grease your pan good!

Moist Walnut Banana Bread


Ingredients:


  • 1 cup mashed bananas
  • 1 cup sour cream (I used low fat plain yogurt)
  • 1/4 cup margarine
  • 1 1/3 cups white sugar
  • 2 eggs
  • 1 teaspoon Vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch pan, or two 7x3 inch loaf pans.Combine banana and sour cream. Set aside.
  2. In a large bowl, cream together the margarine and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla and banana mixture. Combine the flour, baking soda, baking powder and salt; stir into the banana mixture. Spread the batter evenly into the prepared pan or pans.
  3. Bake for 50 minutes in the preheated oven, or until a toothpick inserted into the center of the bread comes out clean.

Thankfulness, babies and walnuts...

A new computer can definitely put the fire under ones buttocks to write a very long overdue post ;-)
I have not been able to update my blog in about one month!!! yes it's a crying shame...but I really do blame the computer or the lack thereof...
As of today we finally have a new, working computer! Yeah, three cheers!!!

Well the title on this post might be slightly confusing lol but I felt it fit my mood today ;-)
This will be a short post and hopefully one I will look back to often, and add to it. As you have noticed, this blog is not my life...just my hobby. Sometimes it's hard to draw a line between the two. I find myself getting stressed over not posting an update on my blog, or not taking enough pictures, or the mere fact that time seems to slip away astoundingly quick these past few months...lets not even bring the whole working computer business into the light. Anyways My family comes first and this blog sadly but most certainly comes last on a long list of priorities.
These past couple of months I have found myself reading up on the true meaning of being a mother/wife to my loved ones. An eye opener for sure! (try reading "created to be his help-meet" such a good book!)
I'm learning that my babies deserve the best I can give them, they do not come after this blog, or after my guests I entertain, or any other, so say priority I might have. My husband and children, (babies...see the title) are my God given job and I am learning to accept the responsibility.

Through all this I have also learned that the key to embracing this way of living, is joy, pure joy, only the joy of the Lord will do (thank you very much! ;-)...)
I've found that joy itself doesn't just come knocking on your door. You need to be open to God to work in you and to accept the joy of the Lord.
One way I've found is to be thankful...I'm a relatively negative person (you can blame the melancholic in me)
and sadly the first thoughts in my mind and the first words out are negative ones. Sad but true!
This is something, that can eat at you (trust me I know!) it leads to complaining, jealousy and rivalry not to mention depression if you let it get that far.
I really don't want that in my life, and if I want to be the best help-meet to my husband and the best mother to my children. I really need to work on that, because honestly, who wants to come home to a complaining, negative, critical and depressed wife? Not me that's for sure!!!
So how am I working on this?

  •  I'm writing scripture down on little index cards and placing them around the house where I can see them. encouraging verses of God's promises to us ;-) what a difference a little verse can do on a gloomy day!
  • I am making "thankfulness" lists, list of things that day that I was truly thankful for, even the itty bitty ones like coffee creamer (yes I went there lol). Trust me this takes practice! but even in the darkest days there are always "thankful" moments, you just got to dig a little deeper.   
Here is my thankfulness list for today!:
  1. Snuggles from my son this morning
  2. New clothes to wear to church
  3. Cinnabon coffee creamer
  4. Starbucks bacon Gouda breakfast sandwich...yum!
  5. God's promises coming true even in the early morning
  6. A good strong and healthy mind (so that I could come up with a solution to locking the keys and phones in the house lol) 
  7. A beautiful day
  8. The green of the leaves and grass around me
  9. The smell of summer soon to be
  10. My babies giggles
  11. My husbands strong hug
  12. A great church family with so many smiling faces and friendly hugs
  13. Sunday school for the boys so I could enjoy the service with both of the love of my life
  14. A great message from God this morning and Godly pastors who are willing to open themselves to be led by God
  15. Inspiring friends, they show me that being a proverbs 31 woman is not a myth
  16. God's provisions in all shapes and sizes
  17. A loving husband who loves me no matter what (am I blessed or what!)
  18. A new computer!!!! 
I could go on and on and on...but I think you get the picture ;-) 
if you are having a rough day...take time to sit down and be still for a couple minutes, close your eyes and pray for God to speak to you...be patient. Lean on some of the scripture you have written on little note cards and recite them. Make a "thankfulness" list and you will be blessed by how many blessings in disguise you can find!  but you have got to try, start with "I'm thankful for a new day" and go from there...I'm pretty sure you are thankful for the clothes you wear and the food you eat! ;-) after writing everything down. Thank God personally and out loud for everyone of those items. God will come and turn your bad day around if you are willing to surrender to Him, He can most definitely handle your frustrations and anger, He has been turning mine into beautiful things.

And as for the walnuts...lol I've just been craving them and eating them by the bags!....Must be all those mumbled preggo hormones ;-)

Oatmeal Cookies, Tea and Good Company!

The heartfelt counsel of a friend is as sweet as perfume and incense.


What a "fresh of breath air"...lol I mean a "breath of fresh air"!My mind has begun to slowly deteriorate as my children begin to grow smarter. I sometimes wonder if they just outright suck the senses right out of me...it's a theory!

What a breath of fresh air to sit down, with a cup of warm tea, a warm cookie and a good friend! God made us relationship minded, and the craving for acceptance and craving for company stems from that very concept. We are made to help each other and support one another.
My husband and I LOVE practicing hospitality, it's what makes us tick, it gives us a fulfillment. We want people to leave with a breath of fresh air, to be encouraged and their spirits lifted. And in return I feel uplifted and blessed beyond words! I really miss the opportunities to just hang out, relax, talk and sip some good ol'hot tea and munch on some sinfully delicious cookies ;-)

We here in America have lost the beautiful art of "hospitality", a lot of us including me have turned to "entertaining"."Entertaining" is a whole different concept than "hospitality",
entertaining people is to show off or have your guests leave with the feeling of awe and slight inadequacy. Hospitality is to truly cater toward others true needs, is to entertain without the need to impress or to receive flattery, your guests leave uplifted and blessed.
I read a poster on pinterest one day. that wrote those definitions, it suck with me and really made me think hard about what my motives are when inviting people over. Am I just seeking acceptance through impressing others? if so I'm going about it in an entirely wrong way. Nothing is ever about me. It's first and foremost about God then others so when I practice hospitality it should be for the edification of my God then with His help I can go on and minister toward others. regardless of the meal I serve or the state of my home.

So thank you dear Aunt for joining me today and uplifting my soul with our nice talk! it did my heart good! and I have a lot to learn from you! ;-)

These cookies were made by my little blessing and enjoyed thoroughly by us ;-), they are the first cooking project he actually asked to do (instead of me probing him to help). So I was definitely not going to say no to his eager little brain. But h the impatiance of little hands! before we knew it there was flour everywhere and in every single container in his reach. a lot of guess work later we arrived at these final products! I must say they rival my favorite oatmeal raisin cookie by far!

Spiced Oatmeal Raisin Cookies



Ingredients



  • 1/2 cup butter, softened
  • 1/2 cup butter flavored shortening
  • 1 cup packed light brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3 cups rolled oats
  • 1 cup raisins




Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, cream together the butter, butter flavored shortening, brown sugar, white sugar, eggs, and vanilla until smooth. 
  3. Combine the flour, baking soda, cinnamon, cloves, and salt; stir into the sugar mixture. 
  4. Stir in the oats and raisins. 
  5. Drop by rounded teaspoonfuls onto ungreased cookie sheets.
  6. Bake 10 to 12 minutes until light and golden. Do not overbake. Let them cool for 2 minutes before removing from cookie sheets to cool completely. Store in airtight container.

Healthy Homemade Chips With Sea Salt

Crunchy goodness!

Boredom has struck again...either that or pure laziness lol
I found myself craving some good ol plain salted chips. I don''t usually have chips in the house and it doesn't show its face on my shopping list very often. which means I need to get off my lazy behind and drag three sleepy whinny kids to the store...yeah NOT happening!

for you moms with two or more kids...doesn't it just bother you that the stores only offer carts with one seat (maybe two seats, but you will have to fight the other  moms greedily eyeing it...to the death if you must...good luck with that!) they should come up with a better way for moms with three kids under three to drag there them around.

For those of you who've never experienced an overtired  hungry two year old in a over-crowded-no-lanes-open Walmart, let me illuminate it for you. It's as if that sweet contained cherub of yours becomes a possessed and  uncontrolled mess of "I want...I want...I want..." followed by ear shattering screams and nerve wracking whines. Its definitely not a scene for the faint of heart!
And so I'm sure you fully understand the reason of my apprehension of taking three of such cherubs with me, just for a measly bag of unwanted calories. So like every other time, I decided to make my own chips.
this technique was very interesting and fun but extremely time consuming. I definitely won't be making homemade chips by the bag! 
All that was needed really was a golden potato, sea salt or other spices based on your own preference, paper towels, olive oil and a microwave. 
These were VERY addicting! I only wish I could make more in one go. the moment they came out of the microwave I was holding back on popping them in my mouth!
Try them just for fun! ;-)




Pointers I found useful:


  • I didn't use the bag I just dunked the potato chips in the oil on the plate and made sure both sides were covered.
  •  I used extra virgin olive oil .
  • Overlapping chips is not recommened, as they tend to be slightly "chewy" in the end compared to keeping them seperated. 
  • For toppings I used seasalt, you can use onion powder,  cayenne or squeeze fresh lime juice with the olive oil in the plate before dunking the potatoes, and then seasoned with seasalt and just a little kool-aid lemonade powder mix. (the kind without sugar added) The powder mix has citric acid in it which really gave the salty lime chips a nice zing! 
  • Always watch the plate in the microwave, it only takes sec. for the chips to burn.
  • I used my kitchenaid mandoline to slice the potatoes, the thinner the crispier and the quicker they cook. but try to keep the slices similar in size.
  • use any spices you would like, spice blends work well...experiment!
  • Why not trying this with beets and sweet potato? I haven't tried it but it seems doable ;-) Here's a recipe from Giada de Laurentiis, but it involves frying the chips. but sounds good nonetheless.

Homemade Potato Chips


Ingredients

  • 1 tablespoon vegetable oil
  • 1 potato, sliced paper thin (peel optional)
  • 1/2 teaspoon salt, or to taste

Directions

  1. Pour the vegetable oil into a plastic bag (a produce bag works well). Add the potato slices, and shake to coat. (or do it the messy way as mentioned above )
  2. Coat a large dinner plate lightly with olive oil or cooking spray. Arrange potato slices in a single layer on the dish.
  3. Cook in the microwave for 3 to 5 minutes, or until lightly browned (if not browned, they will not become crisp). Times will vary depending on the power of your microwave. Make sure you continue to watch the chips as they brown fast. 
  4. Remove chips from plate, and toss with salt (or other seasonings as mentioned above). Let cool. Repeat process with the remaining potato slices. You will not need to keep oiling the plate.

Homemade Hamburger Buns


Don't you just LOVE the smell of freshly homemade bread??? mmmm I do! I remember my mom baking bread nearly every week, we would smell the bread and beg mom for a piece the moment it came out of the oven...we would be sooo impatient when she told us no. It had to cool down...
but oh nothing smells better (well maybe the combo of bread and coffee and maybe cookies mmmm I'm getting hungry just thinking about it!)than fresh bread.

Winndixie had a buy one get one sale going on on their pork boneless country style ribs. My hubby LOVES pulled pork and he had asked me if I could make it this past week. I agreed and started to get the crock pot ready the next morning. By the time I had finished and the pork ribs were bubbling away in the crock pot and smelling good...I noticed I had no hamburger buns ore bread for that matter...with three kids at home I really didn't want to pack them all in the car just to get some buns. So decided to make them myself...I've used two recipes so far and both were good but I preferred the last one with the pulled pork and the first one with regular hamburgers.
both are fairly easy and quick to make and even quicker if you own a breadmachine, just follow the recipe and add everything together in the breadmachine then select the dough cycle and voila just pick up at the next step.

Homemade Hamburger Buns (recipe 1)


Ingredients:


  • buns
  • 3/4 to 1 cup lukewarm water
  • 2 tablespoons butter
  • 1 large egg
  • 3 1/2 cups All-Purpose Flour
  • 1/4 cup sugar
  • 1 1/4 teaspoons salt
  • 1 tablespoon instant yeast
  • *For best results (a smooth, slightly soft dough), use the smaller amount of water in summer (or in a humid environment), the greater amount in winter (or in a dry climate); and something in between the rest of the time.

topping

  • 3 tablespoons melted butter
Directions:
  1.  Mix and knead all of the dough ingredients — by hand, mixer, or bread machine — to make a soft, smooth dough.
  2. Cover the dough, and let it rise for 1 to 2 hours, or until it's nearly doubled in bulk.
  3. Gently deflate the dough, and divide it into 8 pieces. Shape each piece into a round ball; flatten to about 3" across. Place the buns on a lightly greased or parchment-lined baking sheet, cover, and let rise for about an hour, until noticeably puffy.
  4. Brush the buns with about half of the melted butter.
  5. Bake the buns in a preheated 375°F oven for 15 to 18 minutes, until golden. Remove them from the oven, and brush with the remaining melted butter. This will give the buns a satiny, buttery crust.
  6. Cool the buns on a rack.


Yield: 8 large buns.

Homemade Hamburger Buns (recipe 2)


Ingredients

  • 2 cups warm milk (110 degrees F/45 degrees C)
  • 1/4 cup margarine, melted
  • 1/4 cup warm water
  • 1/4 cup white sugar
  • 2 (.25 ounce) packages instant yeast
  • 2 teaspoons salt
  • 6 cups all-purpose flour, or as needed

Directions

  1. In a large bowl, stir together the milk, margarine, warm water, sugar and yeast. Let stand for about 5 minutes.
  2. Mix in the salt, and gradually stir in the flour until you have a soft dough. Divide into 25 pieces, and form into balls. Place on baking sheets so they are 2 to 3 inches apart. Let rise for 20 minutes.
  3. Preheat the oven to 375 degrees F (190 degrees C). Bake the rolls for 15 minutes in the preheated oven. Cool slightly, then split them in half horizontally to fill with your favorite burgers.
